Henan cuisine is one of the oldest and most traditional cooking styles in China. It is known for its meticulous preparation and delicious soups. Ingredients are selected according to the four seasons giving its dishes very seasonal flavors. This cuisine is adopted from Jiangsu and Beijing cooking styles, but leans towards Jaingsu as it is much lighter than Beijing food.
There is a wide use of onions, pork is the main meat component but it is not in the soups. Soups mainly consist of lamb and mutton. Besides soups, rice the major food, served in oil from animal fat but this is losing popularity due to health concerns.
